Thai Feast

My friend Zara and I have been trying to find a good curry recipe. This time we tried red curry with chicken, zucchini and peppers. It was better than the green we tried last time, but the seasonings are still so unfamiliar!

We also made spring rolls (O.K. mostly Zara made the rolls) with dipping sauce, they were really good.

For dessert we made some sweet rice with mango, it was not too successful because we were too cheap to spend 15$ for a bag of sweet rice. Still the mango was good and it was nice and coconuty. (Sorry no picture, it was late and we ate it all)
We had fun and ate way too much! Next time we might have to try Abbie's favorite "hot spaghetti" AKA Pad Ke Mao or drunken noodle.

  2. In lieu of sweet sticky rice (which is soooo good), try this:
Bring to gentle boil 1/2 c rice and 3 c coconut milk. Reduce heat to slow simmer. Stir forever, or until rice is cooked through and mixture is thick. Do not be lax about stirring! (I always have to add more milk...cow milk works, too.) Sweeten to taste, about 1/2 c sugar (mixture will thin out a touch when sugar is added). Stir in 1/4 to 1/2 t ground cardamom (I like a generous amount). Serve sprinkled with chopped blanched almonds and more cardamom. Also nice with mango. Yum.

  4. I have a Sri Lankan Hindu lady friend - they include some green lentils and use cardamon pods in milk rice - the perfume was heavenly - it is special dish for Hindu New Years - mid April.
